Well, the excitement of the holidays has faded, and after Brent having so many random days at home, he’s now back at work. That leaves Cormac and I to fill most of the day ourselves.
For my part, I’ve been cooking more this week, which always makes me happy. Earlier in the week I made Spinach Linguine with Basil-Cilantro Pesto and Artichokes from Veganomicon. Possibly the longest recipe name ever, but quite delicious nonetheless. I love me some artichokes.
One morning when Brent was home, I even had enough time to make French toast. I just used some Dave’s Killer Bread (not awesome in French toast) and a simple egg wash with egg, sugar and vanilla extract. I topped it with maple syrup, toasted coconut, and sliced almonds.
And tonight I made Chicken Tikka Masala from Jamie Oliver’s Food Revolution.
It was good but not as creamy as I remember. Then again I’m missing Indian food like crazy so I was still happy.
I think Seattle knew I was getting some cabin fever because it was actually fairly sunny this week. C and I were able to get out for several bundled up walks with friends.
And he was feeling a lot better, so we got plenty of fun playtime in as well.
I also bought him a new clip on high chair from a consignment shop and he really loves it.
Look at how little he still looks! I’m so excited to start giving him solid foods, but his GI doctor and his pediatrician want to wait, due to his reflux and sensitivity to dairy and soy. They are concerned about his weight gain (or lack thereof) and possibly more allergies, so breast milk only it is, for now.
I think that’s all for this random brain dump post. Now off to enjoy the weekend with my two favorite guys!
