Summer Came to Seattle

We’re having another gloriously beautiful Seattle weekend, and it’s actually supposed to stay that way for awhile! Even better, I had Saturday (and tomorrow) off, so I got to enjoy it! Brent and I got out of the city for a little nature action yesterday. We headed east on I-90 to the Mt. Baker-Snoqualmie National Forest. We got there early, thankfully, because by 9am the sun was out in full force and we were sweating like crazy. We hiked a beautiful 8 miles before calling it a day and heading out in search of a beer.

It was such a perfect 80 degree day that we felt compelled to make an equally summery dinner. We used the recipe for Deluxe Lobster and Potato Chip Rolls from Food & Wine, but substituted Dungeness Crab for the lobster based on availability and local flavor. We also roasted some corn because it’s one of my favorite summer treats, but this corn was nowhere near as perfectly sweet as Indiana corn in August. Alas.

That sandwich was so good though! Sweet crab on a buttery brioche roll, combined with the crispy crunch of classic potato chips. Yum!

We don’t have any real plans for the holiday tomorrow, but I’m excited about the sunny forecast and the fact Brent and I both have the day off! Hope you’re all enjoying the holiday weekend!
