Guys I have the best Superbowl snack ever! So just remember that for the next 365 days and come back next year and make these, okay?
You all know I love buffalo sauce and blue cheese. Its just one of those super perfect combos, like peanut butter and jelly, or Sundays and brunch. Can’t get enough. So I put it on some nachos. Obviously. I’m sure I’m not the first person to think of this, but here’s how I did it.
First whisk together 1/2 cup hot sauce (I use Frank’s Red Hot), 1/4 cup unsalted butter, and 1tsp Worcestershire sauce over low heat until combined.
Then add 1 pound or so of chicken breast tenders to the pot and cover. Flip chicken as needed until cooked through. Remove from heat and shred chicken with a couple forks.
Meanwhile, in a small pot melt 1T butter. Add in 1T all purpose flour and whisk until combined. Slowly pour in 1 cup whole milk and whisk. Cook on low until thickened. Add in 4oz blue cheese crumbles and whisk until cheese is slightly melted and sauce is thick.
Spread out tortilla chips on a sheet pan lined with foil. Spoon buffalo chicken mixture evenly over chips. Then pour as much of the blue cheese sauce over the chips as desired. (I reserved about 1/4 cup for dipping). Sprinkle with 2-3T of blue cheese crumbles and bake at 325 for 10 minutes.
Remove from oven and sprinkle with 2T chopped scallions and 1T chopped cilantro.
Eat. A lot.
