PiƱa Colada Pancakes with Pineapple-Rum Syrup

Another weekend, another Sunday morning pancake breakfast. But these were especially delicious. I wouldn’t lie to you guys.


I used our usual buttermilk pancake recipe, and added 1 cup diced pineapple, and 1/2 cup toasted coconut. They were tasty, to be sure, but the real star was the syrup. I didn’t think plain maple syrup would bring out the best in these pancakes, so I thought about what else went well with pineapple and coconut. I think we all know rum was the obvious answer.

Pineapple-Rum Syrup

  • 1/2 cup sugar
  • 1/4 cup rum
  • 1/4 cup water
  • large chunk of pineapple (I used the core)

Bring everything to a rolling boil for about 5-10 minutes. Remove pineapple. Let cool. Delicious on everything, I swear. While I did not give Cormac the syrup, he was definitely a big fan of the pancakes. I have leftover syrup, which should last in the fridge, by the way, so I think we’ll be having a repeat next Sunday,


Oh my gosh, was this Saturday ever perfect! A high of 57 degrees and 100% sunny. It was the most beautiful day we’ve had in a loooong time. And I got to spend it with my two favorite guys. We woke up around 7:30 and after getting dressed and feeding Cormac, we headed out to breakfast at 5 Spot. We used to live down the hill from it and I was a huge fan. I don’t think we’ve been there since we moved out of Queen Anne, but it was great to be back. They have a steady menu, as well as a rotating, themed menu. After a bit of indecisiveness, I had some Creole Eggs Benedict from the “Blues Highway” menu. Pretty sure I haven’t had a benedict since 2011. It. Was. Awesome.

And Cormac feasted on a side of avocado. We’ve been giving him what we’ve been eating, within reason, but even though I’ve been eating dairy without it bothering him, I’m still a bit nervous about giving him straight dairy, so I let him stick with avocado. He seemed content with that and his giraffe.

After Brent and I were done with breakfast and Cormac was done flirting with the other patrons, we headed back home so that someone could take a nap. When he woke up we took advantage of the weather and headed out a walk to grab some lattes and scope out the farmers market.

And then we met our friends for beer at Two Beers! We hung out for a few hours swapping baby stories and drinking. I love seeing babies together. Cormac is at that stage where he finds other babies absolutely fascinating.

Plus the beers were tasty. My favorite was the Hearth, their winter warmer.

We got home, put Cormac to bed, ordered some take-out and I ate myself into an Indian food coma.

So basically, it was kind of a perfect day. Oh, except for the fact that we rented Here Comes the Boom from Redbox and it was literally the worst movie ever made. Alas, can’t win ’em all.
